Lightly flavoured with tahini, this classic hummus recipe is creamy-smooth. For a more full-bodied flavour in your hummus, increase the tahini by up to 2 cups. Stir the tahini well before measuring – it separates when it sits.
3 cups cooked chickpeas in brine
⅓ cup lemon juice
1 clove garlic
½ cup tahini
METHOD:
Warm chickpeas with brine in microwave at low temperature. Discard half the brine then purée with the lemon juice and garlic with a hand blender for 3 to 4 minutes, or until smooth, scraping down sides of bowl if necessary. Add tahini, and purée for a further 2 minutes, or until mixture has consistency of soft cream cheese. Add 1 to 2 tablespoons of water if necessary. Season with salt and pepper to taste. Drizzle the hummus with olive oil and sprinkle with cayenne pepper and some chopped herbs of your choice. You are ready to serve!
